how to find cd key on steam
Then you cant access the CD key.
Used to be possible to right click games in the library and view CD key.

If the game isn't installed, while the [View CD Key] -option isn't there upon right mouse clicking the game, it's there under the links on the right (if Library is in Detailed -view.)
If the game is downloading or installed, then you can see the [View CD Key] by right mouse clicking the title on your Steam -library.

The developers had that removed.

They indeed can.
BioShock 2 is the first thing that comes to mind, since it dropped the GFWL support and shifted over to Steamworks.
CD keys can only be accessed if the game is installed. Make sure the game is installed first.

The short answer is, you don't. If you redeemed a physical copy, the key should be on a piece of paper in the case, or possibly on the disc. If you bought from a third-party site, you will need to log into that site to see the key. Beyond that, it's up to the developer's discretion whether they provide a key or not.

Shame on valve for that. It helps them prevent users from using their key (bought or redeem on Steam) on other platforms like GOG who import everything you allegedly bought.

That is not how GOG works. GOG Connect is linked to your Steam account and will give you all the games you own on Steam on GOG (if they are part of the GOG Connect program)
The CD Keys are worthless for any other client except Steam.
Only exception are keys from old EA games like Sims 3 or similar, those can be used on ORIGIN to give you a free copy there. And those are still displayed here on Steam in your library.

How to see what product of a key:
- Go to the Steam register key site
- Try Activate the Code
- Press F12/Ctrl+Shift+I/Right click > Inspect
- Go to "Console" Menu
- Press "Console Side Bar" Or a left arrow
- Go to "Info"
- Click the "Post" link like this "POST "https://store.steampowered.com/account/ajaxregisterkey/"."
- Press ajaxregisterkey/
- It should show "purchase_receipt_info:" Click on it or the right arrow on the left side
- Look at "Line_items:"
You can see the game name there
